So simple, yet so damn good. One of the easiest, tastiest, healthy treats ever. Also a great post workout snack.
All you need is a ripe banana, eggs and coconut oil for the pan. I like to add a little cinnamon and few drops of vanilla extract but it isn’t necessary.
2 eggs and 1 banana makes 2-3 pancakes
If you have a blender simply blend the banana then the egg.
If you don’t have a blender simply mash the banana with a fork then add whisked egg to mixture.
Heat teaspoon of coconut oil in pan, pour mixture and allow to spread evenly across pan. When the centre bubbles flip it.
Especially delicious when served with some greek yoghurt, berries and a dash of honey.
